El vino tinto Valautín Garnacha está producido por la Bodega Ca' di Mat de San Martín de Valdeiglesias (Madrid) y acogido a la Denominación de Origen Vinos de Madrid.
Tinto con barrica elaborado con uvas de la variedad Garnacha al 100%, procedente de varios viñedos de la localidad de San Martín de Valdeiglesias (Madrid), plantados sobre suelos graníticos, con diferentes orientaciones y altitudes (entre 650 y 750 metros). Viñas de secano, con conducción en vaso, cultivadas de manera tradicional y máximo respecto con el medio ambiente. Vendimia a mano.
Valautín Tinto se vinifica de manera tradicional, con uva entera y maceración durante 90 días. Posterior crianza durante 12 meses, la mitad del vino en depósito de hormigón y la otra mitad en barricas de roble francés de 500 litros.

The red 2021 Valautín Garnacha is a village wine from San Martín de Valdeiglesias, as they used grapes from many small plots of old vines. It's not a shy or light wine at 15.1% alcohol, and it has good freshness and acidity. The full clusters fermented with indigenous yeasts and had three months of maceration, followed by malolactic in old foudres and 10 months of élevage in a 10,500-liter French oak foudre. The wine is super aromatic, floral, elegant and perfumed, and the medium-bodied palate has a lot of grip, with the chalkiness and dry sensation from the granite soils and a very tasty, almost salty finish. The oak is imperceptible, the extraction is moderate and the wine is elegant but with grip. 2021 was a great vintage for them. 14,000 bottles produced. As the 2019 had not yet been bottled at the time of my tasting, I retasted the 2018 Valautín Garnacha, which I liked even better than when I tasted it last time. The wine is pale, delicate, floral and elegant and is developing at a very slow pace.
