Las uvas de la variedad Albillo Real con las que está producido, proceden de una única parcela en el Paraje de Los Peros en la Sierra de Gredos en San Martín de Valdeiglesias (Madrid). Viñas viejas de aproximadamente 70 años de edad, plantadas sobre suelos de composición granítica con afloramientos de granito rojo (episienita). Viña de secano, en vaso y cultivada en ecológico.
El vino blanco Los Peros se vendia a mano en cajas, selección del fruto en campo y bodega. Presando directo de la uva entera sin despalillar, fermentación espontánea con levaduras autóctonas y crianza en barrica de roble francés durante 12 meses sin batonage.

The 2021 Los Peros Albillo is a lieu-dit, or paraje, white from the zone that gives it its name, within the larger zone of Andrinoso of San Martín de Valdeiglesias, where they have 80-year-old vines on granite soils at 850 meters in altitude and the highest part of the village is on pink granite soils. It fermented in a 1,000-liter oak foudre, where it matured with lees but without bâtonnage for eight months. It's not explosive; it's subtle, and the palate has a strong influence from the soils, with marked chalkiness and a stony sensation coupled with the electric feeling from the granite. It has 14% alcohol and a pH of 3.51. 1,200 bottles were filled in September 2022. - End of May 2023, The Wine Advocate

The single-vineyard white 2019 Los Peros Albillo comes from the old vineyard that gives the wine its name, from the Andrinoso zone of San Martín de Valdeiglesias at 850 meters in altitude on granite soils. The juice from pressing the full clusters fermented with indigenous yeasts in 300-liter oak barrels and then matured for eight months in a used 500-liter oak barrel. It's from a low-yielding year in this vineyard, and the wine has more volume and body and is more concentrated than the Valautín from this same year. There are some bittersweet flavors here, a round palate and a soft texture, quite varietal. It has the stuffing to develop nicely in bottle, where it might gain some weight and develop more aromatic complexity. 600 bottles were filled in July 2021. - November 2021 Week 2, The Wine Advocate -
