La Viña de Ayer es un vino tinto con crianza elaborado por Bodegas Soto Manrique y acogido a la Denominación de Origen Protegida Cebreros-Sierra de Gredos.
Es un vino elaborado con uva de la variedad Garnacha al 100%, procedente de viñas viejas en vaso, plantadas sobre suelos de composición granítica y pizarra. Bajos rendimientos y a una altitud entre 750 y 1.060 metros sobre el nivel del mar.
Tras la vendimia, la uva es refrigerada en cámaras frigoríficas a 0ºC, se despalilla toda la uva y encuba en tanques de hormigón. Fermenta espontáneamente con sus levaduras autóctonas, al acaba la fermentación alcohólica se mete en foudres de roble de 1.500 litros donde permanece 12 meses.

The red 2021 La Viña de Ayer was produced with Garnacha from old vines at different altitudes from the village of Cebreros and on different soils. The grapes were handpicked between September 10th and 30th, destemmed by soil and altitude and then fermented with indigenous yeasts in concrete vats; it even finished fermenting without skins. The wine matured in 15,000-liter oak vats for 12 months. It's pale and bright, and there’s also brightness in the aromas, floral and expressive, with red rather than black fruit and a sense of purity and balance that I loved. It's elegant and juicy, with a direct and approachable style with very fine tannins and a gentle mouthfeel. 10,000 bottles produced. The village red 2019 La Viña de Ayer is pure Garnacha from Cebreros from different organically farmed vineyards, altitudes and soils (but now almost exclusively granite based as there are less and less places with slate and they use them for two specific wines). The wine has a light and bright ruby color and notes of wild red fruit and herbs. It's medium-bodied and has very fine tannins, a fluid texture and supple flavors. The grapes were cooled down, destemmed and fermented in concrete vats with indigenous yeasts and matured in 1,500-liter oak barrels for 12 months. It has a very approachable profile, but it's serious and has complexity and depth that transcends the price level. 60,000 bottles produced. It was bottled in January 2021. - November 2021 Week 2
